Sébastien Brocard, chocolate-maker

Beignets de DivonneSébastien Brocard won the gold medal in the French dessert championship. In Divonne-les-Bains, he re-invented an old local speciality that had fallen into disuse: Divonne beignets. He modernised the recipe and now, at the Brocard pastry and chocolate shop, at 31 Rue des Bains, you can buy delicious cubed, creamy and golden Divonne beignets, Sébastien Brocard style.

The champion also invented his own specialty, a lightly flavoured macaroon, Le Petit Divin.

Dumont, chocolate-maker

Christian Dumont creates upscale chocolates that he makes in his workshop and sells directly in the tearoom adjoining the workshop. For his recipes, he exclusively uses selected cocoas: old-style cocoa beans roasted in a copper vat. He uses cocoa butter only and absolutely no vegetable oils. Note that the legislation allows 5% vegetable oil in “100% cocoa butter” chocolates...

His creations (among others): 

For several years now, Christian Dumont has been undertaking research in order to subtly pair chocolates and teas. He uses teas in his chocolates; he sells selected teas; he advises customers about which teas to taste with his various creations.

Le Comptoir du Chocolat is a charming little tearoom. Christian Dumont has concentrated the quintessence of the “chocolate spirit” in a small space. Chocolates, teas, decoration, porcelain mugs, teapots, reception… the whole offering is refined and delicious with an Oriental fragrance, right in downtown Divonne-les-Bains.
